First of all vegetables, achards creole is a dish of half-raw vegetables, vinegar, ginger, and other spices. This dish comes from India. We eat usually sandwiches or to accompany a meal like carry or rougail.

  • 2 tablespoons ginger

  • 2 tablespoons vinegar

  • 6 carrots

  • 2 cups fresh green beans

  • 1 white cabbage

  • 2 tablespoons turmeric

  • 4 cloves garlic

  • 2 onions

  • 2 tablespoons fresh ginger

  • 1 tablespoon oil

  • Hot pepper (optional)

  • Salt & Pepper


  • Rince all vegetable and chop them in julienne
  • Finely chop onion
  • With a mortar and pestle mash garlic, ginger, and salt and pepper
  • In medium heat cook onion with oil, add turmeric and the mixture of garlic and ginger
  • First, in a large saucepan cook green beans which is the longest, and stir for 5 minutes on a small heat; set aside
  • Second, cook the carrots for 5 minutes on a small heat.
  • And add the rest of the vegetables. Add hot pepper (optional) Cook and stir for about 10 minutes and turn off the heat.

  • Almost ready… Let it cold. And add vinegar. Mix everything together


  • If you add hot pepper be certain to have open windows, the smell can be strong; Season according to your taste. For an easy cuisine use a julienne peeler
