What is “Combava” (Kaffir Lime) ?
The fruit, the kaffir lime is round from 5 to 8 cm, very bumpy with the lumpy rind extremely rich in essential oils; it is tightened at the top, forming a nipple. It’s base round. 1 chop onion
3 fresh small green hot pepper
1 tablespoon coarse salt
3 tablespoons combava zest or cilantro
- Cut tomatoes in cube (as small as possible)
- Mash in a grinder spice or mortar half onion, red hot pepper, cilantro or combava, and coarse salt
- In a medium bowl add tomatoes and mixture of red hot pepper

- Use a mortar crush slowly with red hot pepper to not affect your eyes. If your eyes are affected, clean them straight with cold water. Clean your hands straight after using hot pepper.
